what is a good carb style air filter/cleaner assembly that you guys use?

Damon I have some k&n’s for the carb style and a aluminum cover I’m not using. I went with a cone style.

If you can fit it under the hood go with the filter can off of a 1 ton GM truck. Huge filter in those, but we're probably talking cowl hood + BL to clear it. There's two versions of lids for those. The 1/2t's got the low top and the 1t's got the tall top. Can even find the tall top for the two stud TBI's, but they're rare-ish.
