  • Award Winning CHILI RECIPE

    Aaron's Chili
    3 lbs Ground Beef
    1 large white onion
    1 large red bell pepper
    5 cloves garlic (chopped)
1-2 jalapenos diced ( or reserve and serve on the side)
    2-4 cups beef stock
3 29 oz cans kidney beans
1 15 oz can black beans
1 one bag of Mojave chili powder
    3 Tbs paprika
8 oz El Pato hot tomato sauce (Yellow Can)
    1 sm can tomato paste
2 28 oz can of stewed tomatoes (Diced/chopped into chunks)
    3 Tbs cumin
    1 Tbs oregano

    salt/pepper to taste

brown the meat and onion, add the garlic and jalapeno for the last two minutes. add the stewed tomato, El Pato, and 2 cups of beef broth. bring to a boil, then reduce heat and simmer for 30 minutes. Add paprika, chili powder, beans with the liquid and any other spices. I have added Montreal Steak Seasoning also. simmer 1 - 2 hours. serve with goodies: shredded cheese, chopped green onion, sour cream, and don't forget the corn bread muffins or Cheddar Cheese Biscuits!

    Cheddar Cheese Biscuits

    2 cups Bisquick baking mix
    2/3 cup milk
    1/2 cup cheddar cheese shredded
    1/4 cup butter, melted
    1/4 teaspoon garlic powder

Heat oven to 400. Mix baking mix, milk & cheese until a soft dough forms:beat vigorously for 30 seconds. Drop spoonfuls onto cookie sheet. Bake 12 minutes or until golden brown.

Mix butter and garlic powder and melt. brush over warm biscuits and serve.

I use that brand for my rubs because it is crazy cheap. It is usually on an end cap with all of the other mexican spices. If you cant find it, Id use what ever you can russle up.

                              Aaron,

The rainy weather got me to thinkin' today would be a good day to try your recipe. It came out great, thanks for sharing! I ad libbed a bit by also adding 1 lb of stew meat (1" to 1.5" chunks), 1/2 cup of brown sugar, and 2 Tbs cayenne pepper.
..... Make sure you cook in a BIG pot... this is a BIG recipe!!
That is no joke, it was about an inch from overflowing until it cooked down some. I added the beans w/o straining and at first I thought this would be a problem, but after simmering for a couple of hours the consistency is perfect.
